Fiesta Buns

My mom’s neighbor & friend gave her this recipe.  We’re the first to admit that it sounds skeptical.  In fact, the word document of the recipe ends with “I’m skeptical….”.  But she tried it out, and it’s GOOD.  Even Zach ate it.  Which isn’t as high praise as saying Dylan ate it, but still.  That’s [...]

Meat Sauce

My husband’s picky eating is not restricted to kinds of foods. It also extends to brands. For instance, the only spaghetti sauce he will be happy with (other than homemade) is Prego regular. Doesn’t matter what’s on sale or what I have a coupon for. Prego only. And Prego’s fine, but it’s a little meh [...]

Tex-Mex Chicken

This is a great catch-all dish. You can eat it on it’s own or use it as taco or burrito filling. It also freezes very well. Quick word of warning — it makes  A TON. When I make it for my family, I usually just use 4 chicken breasts and that is plenty (But keep [...]

Easy Calzone

This easy to make version of a calzone is a huge favorite in my house. It’s my quick version for those who don’t have a lot of time to spend in the kitchen. (I don’t usually measure anything so I made this for my family last night -see picture above- and carefully measured all [...]

Taco Soup

Summer isn’t really the time for soup, but it’s a dreary day up here in the plains states so I found this appropriate for our day.

Pumpkin Muffin w/ honey butter

My 18 month old is a very picky eater, so our pediatrician recommended “tricking” him by making things like zucchini bread to get him to eat vegetables. He loved the zucchini bread, so I wanted to try other sneaky breads, and after finding a can of organic pureed pumpkin at my local Super Target recently, [...]
