PASTA WITH SPINACH ARTICHOKE PESTO

If you like spinach and artichoke dip, you will love this recipe.  I saw Rachel Ray make it on the Food Network and while I’m not always into her recipes, this seemed like a somewhat healthy dish that could be thrown together pretty quickly.
The original recipe calls for mint, call me crazy, but I’m pretty [...]

Moroccan Stew

I made this for a vegetarian friend who was visiting last year and it is easily one of the simplest, most delicious meat-free dishes I’ve ever had. You are literally opening packages and cans and dumping them into a saucepot, but the combination of the flavors and textures gives it more of a homemade feel.  [...]

No worries, I have some great mayo-free alternative side dishes that are perfect for picnics, barbecues, casual get togethers with friends, any [...]

Spinach Artichoke Lasagna

I was perplexed the other night when faced with the prospect of cooking dinner for some Vegetarian friends.  We don’t do a lot of vegetarian around here.  My husband doesn’t eat many vegetables, so finding something that could please everyone made me a bit stressy.  I called out to the Twitterz and had some interesting [...]

Veggie Pasta Salad

This is such an easy, satisfying pasta salad, you could eat it as a meal. I made it for my family’s 4th of July BBQ last year and I think I might have to whip it up again this year! Plus, who doesn’t love Paula Deen, but it’s hard to find a recipe from her [...]

Baked Brie in Puff Pastry with Cranberry Chutney

I made this on Friday to take to my in-law’s for the annual Father’s Day/father-in-law’s birthday celebration. I have enjoyed baked brie that other people have made, but never tried it myself. I will be trying it again soon. The flavor in the chutney is just wonderful, with a little zing from the tequila, giving [...]
