Marilou’s Casserole

I’m sure when this recipe started out it had a proper name, but I have no idea what it is. I call it Marilou’s Casserole after my beloved late Aunt Marilou who was my second, and sometimes first mom growing up.  She made it for us countless times during my childhood.   This is grub…good [...]

Chicken Cordon Bleu Mac N’ Cheese

This is another one of my “recipes”.  I worked off a basic Mac N’ Cheese recipe and added a few of my own twists.  So, once again, bear with me when it comes to measurements.  A lot of this is me guessing about how much I used of each ingredient.  Use more or less of [...]

Chicken and Broccoli Pasta

I have a “recipe” I make fairly regularly.  The main ingredients, besides pasta, are chicken, butter and heavy cream.  It’s GOOD.  But as I strike up a relationship with Cooking Light magazine thanks to the post I wrote recently (details on THAT to come soon.  I’m as surprised as you are!), I’ve decided to *try* [...]

Slow Cooker Meat Sauce

I realize I already posted a meat sauce recipe once, but this one is very different and just as good. As the recipe (which I borrowed from the Sept. 09 issue of Family Circle) is written, it tastes like pot roast sauce, which is good, but for my traditional-food loving husband, it was not quite [...]

Vegetable Lasagna Toss

This is a really easy recipe to throw together, it’s filling and has everything good in it!

8oz lasagna noodles
1 T. extra virgin olive oil
2 cloves garlic, crushed with press
1 bag (12 oz) broccoli florets
1 cup low sodium chicken broth
1 can (15 – 19 oz) white kidney beans (cannellini) drained and rinsed
3 large tomatoes, coarsely chopped
1/3 [...]

Orzo Italiano

I had part of a box of orzo left from a pasta salad I made a few weeks ago (Did I post that recipe? If I didn’t, I should. It was good…) Anyway, I was looking to use up the rest of the orzo when lo and behold I found this recipe on the back [...]

Everything Lo Mein (Except I used chicken!)

I’m participating in a blog challenge where you have to cook/bake one new recipe each week for 8 weeks, and each week has a theme.  This past week’s theme was “Holiday” favorites.  That’s open to major interpretation!  I thought about holidays and tradition, and then I came up with genius!  My family is jewish, and you [...]

Meat Sauce

My husband’s picky eating is not restricted to kinds of foods. It also extends to brands. For instance, the only spaghetti sauce he will be happy with (other than homemade) is Prego regular. Doesn’t matter what’s on sale or what I have a coupon for. Prego only. And Prego’s fine, but it’s a little meh [...]

Pesto Pasta Salad and Broccoli Slaw

In a previous post, I mentioned that my husband isn’t big on mayo-based dishes. No potato salad. No macaroni salad. No cole slaw. Sigh… makes you sad just thinking about it, doesn’t it? No worries, I have some great mayo-free alternative side dishes that are perfect for picnics, barbecues, casual get togethers with friends, any [...]
