4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)

Pour in the milk and oil and mix well.

Add the chocolate chips (if using) and vanilla extract, and mix again.

Put your mug in the microwave and cook for 3 minutes at 1000 watts (high). The cake will rise over the top of the mug, but don’t be alarmed! Allow to cool a little, and tip out onto a plate if desired.

*I learned about this thanks to Jenn. Oddly enough, my MIL happened to have the recipe in her recipe file.*

I’m not a huge cake person but I LOVE this chocolate cake!!

Chocolate Cake

8 oz dark chocolate pieces
2/3 cup butter
1 cup of sugar
4 eggs
4 heaping tablespoons of flour
4 tablespoons unsweetened cocoa powder
1.5 teaspons baking powder
1 teaspoon vanilla
4 tablespoons of sour cream
2/3 cup heavy whipping cream
9 oz semi sweet chocolate pieces

Line cake tin with grease paper and grease, melt dark chocolate pieces over
water, beat together eggs and sugar, mix in flour, cocoa powder,
baking powder and vanilla extract. Slowly fold in the melted butter
and chocolate mix with the sour cream. Bake suggested temp at 350
until toothpick is clean 40 minutes… Cut cake in half horizontally (I put half the batter into two 9 inch round cake pans and bake for about 25 minutes so I don’t have to deal with that cutting horizontally nonsense!)

Frosting:

Heat heavy cream in sauce pan so that it doesn’t burn and do not boil,
remove from heat, stir in semi sweet pieces, cool until thick. Then frost in between the two layers, and then all over the cake.

Writing up this recipe brings back childhood memories of walking into the house and smelling fresh baked chocolate chip recipies. My mom loved to bake, but she has one unusual little quirk. Everything she bakes has coconut in it. Her bars, butter tarts, and yes, even her chocolate chip cookies. It really does add something to the flavor, though. And even after all these years, these are still my favorite cookies.

1/2 cup shortening (not quite)
1 tsp baking soda (not quite)
1/2 cup margarine or butter
4 tbsp hot water
1 cup brown sugar
1 1/2 cup flour
1 tsp vanilla
1 tsp salt
1/2 tsp nutmeg
2 cups cooking rolled oats
approx. 1 cup chocolate chips
approx 2 small handfuls of coconut

Cream shortening, butter, brown sugar and vanilla. Mix soda with hot water and add to creamed mixture. Combine dry ingredients (except chocolate chips and coconut) and add to creamed mixture. When it is almost combined then add the chocolate chips and coconut and continue to mix until it is all combined.

Drop by heaping teaspoonful (not overly and just packed a little) on a greased cookie sheet. Bake in a 400 degree oven for approx 5 to 6 mins. Until a little golden brown, do not over bake or they will be dry.

PS. You don’t have to add coconut if you really don’t want to, but it does make them better

If you are a milk chocolate person, shield your eyes. There is none to be found here. Although I suppose you could substitute regular cocoa powder and semi-sweet chips, if you are into that sort of thing. But I don’t want to know about it.

These brownies are best when warm right out of the oven.

Dark Chocolate Brownies

Preheat oven to 350

Grease a 9X13 pan

3/4 cup Hershey’s Dark Cocoa
1/2 tsp baking soda
2/3 cup butter, melted, & divided
1/2 cup boiling water
2 cups sugar
2 eggs
1 1/2 cups flour (all purpose)
1 tsp vanilla extract
1/4 tsp salt
1 package of dark chocolate chips

In a large bowl, stir together cocoa and baking soda. Add 1/3 cup of the melted butter. Add the boiling water and stir until thickened. Then add sugar, eggs, remaining 1/3 cup butter and stir until smooth. Add flour, vanilla and salt and combine completely. Stir in 3/4 of the chocolate chips. Pour batter into pan, sprinkle remaining chips on top.

Bake 30-35 minutes.

I take these out before they are completely done, that way they are a little bit gooey inside.
