Crazy Yummy Potatoes
This is one my mom makes, all the time. If she didn’t make it all the time, I’d ask her to because I love potatoes and this THIS takes them to the next level. My kids LOVE when I make these…there is never any left, ever!
It’s so simple it’s sick!
Ingredients:
Potatoes (I use russets)
Bacon, cooked and cut into bite size pieces
Shredded cheddar cheese
1 bottle of your favorite Ranch Dressing
Preheat oven to 350 degrees F.
Wash, peel, and cut potatoes into large chunks. (a little bigger than large bite size chunks). Put into large boiler and boil until almost done. Important…DO NOT OVER BOIL them (you’re going to re-cook them later)! When they are soft on the outside but still firm on the inside, they are done. Drain them, completely.
While boiling the potatoes, cook your bacon fully. (My bacon press is my best friend!) Drain off the grease (I usually put them on paper towels then cover with more paper towels and press down to get all the grease). After all the bacon has drained, grab all the bacon into a bunch and cut into pieces… you can cut into whatever size you want; we like nice bite size chunks.
Now it’s time to layer.
In a casserole dish, carefully add your cooked potatoes. Next, spread the bacon on top of the potatoes. Next, spread cheese on top of the bacon (as much or as little as you like). And last, pour the Ranch Dressing on top. Place in oven and cook until the cheese is melted and it is bubbly.
*If you over cook the potatoes on the first step, the dish will come out more like mashed potatoes. Still good, but not chunky. You can use any cheddar you like (sharp, medium, mild) or really any cheese you want. Use your own judgment on the amount of Ranch to use- it all depends on how many potatoes you’ve used. Bacon bits, even the ‘real’ ones, don’t offer the same yummy results as real bacon does. Hey, I never said it was healthy!
