Fiesta Buns

My mom’s neighbor & friend gave her this recipe.  We’re the first to admit that it sounds skeptical.  In fact, the word document of the recipe ends with “I’m skeptical….”.  But she tried it out, and it’s GOOD.  Even Zach ate it.  Which isn’t as high praise as saying Dylan ate it, but still.  That’s pretty good.  They’re sort of like Sloppy Joe’s.  But not.   We took them out on the boat and ate them when we got to a little island (when Zach nearly drowned.  Kind of.)

Anyway, the recipe:

Fiesta Buns

1 ½ lbs of hamburger, browned and drained
¾ cup grated sharp cheddar cheese
4 ½ oz can of chopped black olives
8 oz. can of tomato sauce
1 small bell pepper, diced
4 green onions, minced
½ T. vinegar
2 T. oil
1 clove garlic, minced
1 small can of green chilies
Brown and drain hamburger and then mix in all ingredients.
Simmer for 15 min.
Spread mixture on french or sourdough rolls and wrap each roll in foil – or two together.<
Bake at 375 degrees for 20 min.
The recipe says that you can freeze the prepared rolls, wrapped in foil, for up to 4 weeks.
Thaw 10 min and then bake.
