Catalina Potatoes
This is a great recipe as a side to BBQ’d meat and is (of course) easy to prepare. The result is flavorful potatoes with a zip.
Ingredients:
- Potatoes
- Catalina Dressing
- Salt and Pepper to taste
Directions:
- Cube your potatoes to whatever size you like.
- Rinse them to get off all the starch.
- Put cubed potatoes into a large mixing bowl and toss with salt and pepper, along with the Catalina dressing. Use enough Catalina dressing to thoroughly coat all the potatoes with a little left at the bottom of the bowl.
- You can spice the mixture up if you like with some red pepper flakes or Cayenne spice.
- Spread the mixture out onto a greased large baking pan, make sure the mixture is not more than 2 potato cubes high.
- Cover with aluminum foil and bake in a 350 degree oven for about 45-60 minutes until fork tender.
- If you like you can remove the foil cover near the end of cooking to brown the potatoes.
