Catalina Potatoes

This is a great recipe as a side to BBQ’d meat and is (of course) easy to prepare.  The result is flavorful potatoes with a zip.

Ingredients:

  • Potatoes
  • Catalina Dressing
  • Salt and Pepper to taste

Directions:

  1. Cube your potatoes to whatever size you like.
  2. Rinse them to get off all the starch.
  3. Put cubed potatoes into a large mixing bowl and toss with salt and pepper, along with the Catalina dressing. Use enough Catalina dressing to thoroughly coat all the potatoes with a little left at the bottom of the bowl.
  4. You can spice the mixture up if you like with some red pepper flakes or Cayenne spice.
  5. Spread the mixture out onto a greased large baking pan, make sure the mixture is not more than 2 potato cubes high.
  6. Cover with aluminum foil and bake in a 350 degree oven for about 45-60 minutes until fork tender.
  7. If you like you can remove the foil cover near the end of cooking to brown the potatoes.

Serve and enjoy!
