Rice Salad
Dressing:
3 tablespoons red wine vinegar
1 tablespoon dark sesame oil
2 teaspoons finely grated ginger
1 teaspoon soy sauce
1/4 teaspoon salt
1/4 teaspoon pepper
Salad:
2/3 cup wild rice (i used the pre-cooked from Trader Joe’s)
1 teaspoon dark sesame oil
1 teaspoon soy sauce
1 1/2 cup shredded cooked chicken (I grilled mine, and just cut it into small pieces)
1 cup snow peas cut up
1/2 cup sweet red pepper, chopped
1/3 cup scallion, sliced
1/3 cup currants
1) Mix dressing. Set aside.
2) Cook rice with oil and soy sauce
3) Let everything cool.
4) Combine salad ingredients together.
5) Mix in dressing.
6) Best served after sitting for a little while.
