Chinese Chicken Salad

Another form submission!  This time from KathyGee1, who says of herself:

Wife, mom, embarrassment to my teenage daughters, preschool teacher extraordinaire.  I love to cook, and eat!  To quote Paula Deen “Honey, I didn’t get this was just by lookin’ at the pictures!”

Ingredients:

1 large chicken breast
4 c. lettuce (romaine and iceberg)
1/2 c. chopped celery
1 small bunch cilantro, chopped (remove large stems)
2 stalks green onion, chopped
1 small can mandarin orange sections (more or less, to taste)
2 Tbsp. sesame seeds
1/2 pkg. won ton skins, cut into thin strips
Oil for frying

Dressing:
4 Tbsp. sugar
2 tsp. salt
1/2 tsp. pepper
1/2 c. salad oil
6 Tbsp. cider vinegar
2 Tbsp. lempn juice
2 tsp. dry powdered mustard
2 tsp. sesame oil

Cover chicken with water.  Simmer until tender. Cool and shred. Fry won ton skins in oil. Fry a small amount at a time. Drain on paper towels. Lightly toss together the chicken, lettuce, onions, celery, cilantro and sesame seeds. Add dressing and mix well. Add won tons last and toss to mix.  Serve immediately.

This is a yummy salad.  Perfect for a warm summer day dinner.
