A Yummy Summer Salad
This is a recipe my mom and I have made many times to take to cook outs and parties. It’s a tasty light salad perfect for those hot summer cook outs. We got the recipe from Paula Deen ( that lady knows what she’s doing).
Ingredients:
Salad
- 2 cups of corn cooked (fresh or frozen)
- 1 large avocado cut into 1/2 inch pieces
- a pint of cherry tomatoes halved ( I’ve also used the cherub tomatoes they have a nice sweetness to them)
- 1/2 cup of diced red onion
Dressing
- 2 tbsp olive oil
- 1/2 tsp lime zest
- 1 tbsp fresh lime juice ( I make mine a little over this because I love the citrus flavor)
- 1/4 cup chopped cilantro
- 1/4 tsp salt
- 1/4 tsp pepper
In a large glass bowl mix together the corn, avocado,tomatoes and onions. In a smaller bowl whisk together the ingredients for the dressing, pour it over the salad and combine gentely. I like to refrigerate this for an hour before serving to give the flavors a chance to combine and for the salad to get nice and cool. This colorful salad makes a great side for grilled chicken!
