Texas Caviar
Oh, so yummy!
1 can black eyed peas with jalapenos
1 can pinto beans with jalapenos
1 can black beans
1 can white corn
1 jar pimiento, chopped
1 1/2 c celery, chopped
1 1/2 green peppers, chopped
1 small can jalapeno
Dressing
1 tsp salt
1/2 tsp pepper
1/2 cup olive oil
1 cup sugar
3/4 cup cider vinegar
1 Tblsp water
Mix peas, beans, corn and pimiento and drain well. Add celery, green peppers and can of jalapenos. Boil dressing and pour over beans and veggies in a large bowl. Marinate overnight in refrigerator. Drain well. Serve with chips or as a relish.
