Banana Nut Bread
1/3 c. vegetable oil
1 1/2 c. mashed ripe bananas (about 3 large)
1/2 tsp. vanilla
3 eggs
2 1/3 c. Bisquick baking mix
1/4 c. brown sugar
1 c. sugar
1/2-1 c. chopped nuts
Preheat oven to 350F. Generously grease bottom of loaf pan. Mix all ingredients in pan with fork; beat vigorously for 1 minute. Bake 55-65 minutes, until center is done. (use toothpick test) Cool for 5 minutes.
Makes a fantastic breakfast bread.
