Portuguese Sweet Rice

The weather in Boston this week is completely miserable, cold & rainy and is suppose to continue all week. Which makes me greatful for hot coffee and sweet treats.
My mother’s side of the family is Portuguese (or as my daughter Haley likes to call it Pork & Cheese – she’s original huh?) and I look forward to every holiday when my aunt (aka Titia) whips up this dish of magic. She won’t give in and share her recipe, but I have found one that produces the same end result.
This goes perfect with a nice hot cup of coffee.
Ingredients:

2 cups water
1 cup uncooked white rice
2 cups milk (whole works best)
1 cup sugar
1 fresh lemon rind (I’ve never used this)
Toppings
cinnamon srinkled over the top
Directions:
Pour the milk and the water into a pot, heat it until it starts bubbling around the edges.
Add the rice, the sugar and the lemon peel.
Turn to low heat. Stir occasionally, just so that the rice doesn’t stick to the pot for about 60 min.
Pour everything into a glass dish/pie plate.
Sprinkle the top with cinnamon.
Some like it warm/room temp, but I prefer it after it’s been refridgerated.
