Chicken Fiesta Salad

This is something I just threw together and it turned out really good.

Field Greens

Grilled chicken (diced or cut into strips). I just use the frozen fajita chicken meat.

Guacomole

Lime

Black bean salsa (recipe to follow)

Salsa

Fritoes

Throw a bag of field greens, or whatever salad mix you have on hand. Warm the chicken breast, dice or cut into strips. Put on top of salad mix, followed by the black bean salsa and guacomole, salsa and fritoes. Squeeze the lime juice over salad.

FOR BLACK BEAN SALSA:

one can corn

one can black beans

one can rotel

generous amounts of cilantro

Add the cans of corn, beans, rotel (I usually drain all). Chop cilantro (1 or 2 handfuls) and mix in, add salt and pepper to taste.
