Greek Snapper

This is an easy, tasty and quick fish recipe that my husband used to make. If you can, get the frozen snapper filets at Publix. They work better and are only 6.99 for two, and are not as “fishy”. Double the recipe to serve four.

Two thawed snapper filets
Two 1/8 inch slices of fresh tomato
Two1/4 inch slices of vidalia or yellow onion
Four slices thinly sliced lemon rounds
Greek Seasoning
Parmesan cheese
Olive oil
Pepper
Bread Crumbs

Lightly spray the bottom of a baking dish with non-stick spray. Drizzle olive oil on bottom.
Place slices of onion on bottom, then put fish filets on top. Squeeze lemon juice on the fish and
place lemon slices on top. Add tomato slices. Drizzle a bit of olive oil over tomato. Sprinkle Greek seasoning over everything. Lightly dust filets and tomato with bread crumbs.

Bake at 350 for 15-20 minutes, depending on the size of filets. Sprinkle parmesan cheese
and pepper to taste over filets and broil for 3-5 minutes. Sprinkle more lemon juice as desired.

Serve with steamed asparagus and wild rice, or whatever side you choose !!

Always good with white wine !
