Mustard Chicken…give it a chance.
I love mustard and I LOVE Mustard Chicken. One of my best friends hates mustard, but LOVES Mustard Chicken. So before you scoff your nose at the recipe, you really need to give it a try. Believe me when I say it’s SCRUMPTIOUS!!
I’m not sure where this recipe originated, but it was passed down to me by one of the families that I babysit for. It’s a hit with my family and at parties and get togethers every time it’s served.
Ingredients:
- Chicken Breast, un-cooked (1-2 pounds, depending on the amount of mouths you’re planning to feed)
- 2 – 4 cups of Yellow Mustard
- 2 – 3 large cans of French’s Fried Onions (crushed)
- 2 bowls for dipping
- 1 baking pan (mine is about 9×13, my mom uses 2 smaller pans)
- Aluminum Foil
Directions:
- Pre-heat oven to 350 degrees
- Cut chicken into pieces (I cut it into small, cube like, pieces, but you can also use tenders or whole breast pieces)
- Crush the French’s Fried Onions (I do this by emptying a can into a freezer size Ziploc bag, seal it well, and then pound it to pieces. The onions should look like bread crumbs.)
- Pour the crushed onions into 1 dipping bowl.
- Pour about 1 – 2 cups of Yellow mustard into the second dipping bowl.
- Dip the chicken pieces into the yellow mustard so that it’s covered.
- Roll the mustard covered chicken in the onion crumbs.
- Place the mustard/onion coated chicken piece into the pan.
- Repeat until all the chicken is coated and in the pan.
- The pieces can touch and should cover the entire bottom of the pan.
- I like to pour any left over onions on top, totally up to you.
- Cover the pan with aluminum foil and place in the oven for 35 minutes.
- Uncover and place back in the oven for 10 minutes and then serve.
I usually serve with a salad and mashed potatoes.
Also makes a great appetizer for parties if you’ve cut the chicken into cubes you can then place on a serving dish, once cooked, with toothpicks.
